Truffle Junkies uses only the finest available chocolates for all
of our truffles, but the chocolates we use in our Connoisseur’s
Series are something different.
These are truly special chocolates.
Most of these chocolates are single origin, meaning that they come
from the cacao of one particular plantation, whereas most chocolates
use a blend from multiple plantations. When you taste a single plantation
chocolate, you are experiencing the subtle nuances of that particular
cocoa. Every distinct flavor of the cacao fruit comes through.
These
truffles are more complex than any chocolate you’ve had.
We
don’t use these chocolates in our other truffle lines for two
reasons. One reason is cost. The chocolates we use in this truffle
line are extremely expensive because of their rarity; therefore, the
truffles in this line are expensive and are meant for an extra special
treat. The other reason we don’t use these chocolates in our
other truffles is that it would be ridiculous to add any flavorings
to these chocolates. We would be ruining the subtle, distinct flavors
of each chocolate by adding flavors to them. The single origin chocolates
we use in these truffles are so unique and complex that you will think
that we have added flavors to them, but we assure you, we have not.

that have been discovered, restored, and revitalized by Amedei. This
75% cocoa delivers powerful flavors and an amazing complexity.

A unique chocolate with magical flavors, this 64% cocoa
bittersweet chocolate is made exclusively with the harvest from the
Millot Estate in the north of Madagascar, near the river Sambirano.
The people of the region have grown cocoa for more than 200 years.

Domori has purchased a portion of the harvest in the Andean
region of Venezuela every year since 1997. In 1998 they grafted several
subclones of heirloom criollo Porcelana on the Hacienda San Jose. Prepare

Edition 2005 Gran Couva – This 64% bittersweet chocolate is made
exclusively with the harvest from the Gran Couva Estate, on the Caribbean
island of Trinidad. The finest Trinitario beans were selected from various
parcels of the estate to produce a truly exceptional chocolate. |

Close to lake Marazaibo, a host of villages
cling to the fertile land of west Venezuela with its extraordinary variety
of flora and fauna. Amidst the fruity scent of mangoes, papayas and
plantains, men work the plantation to harvest the best Criollo cocoa
beans in Venezuela. From these rare pods springs the extraordinary cocoa
used to craft this fine 64% chocolate. |

Made with a hybrid of criollo and trinitario cocoas from
the Sambriano Valley of Madagascar. This chocolate has intense flavor
with aromatic notes of berries, cashews, pepper and cinnamon. It has
a nice acidity, smoothness, and a very long finish.

Made of cocoa obtained from several hybrids of criollo and
trinitario, originating in Sur del Lago, Maracaibo, Merida, Zulia, and
Tachira estates, Venezuela. It has a delicate flavor with notes of almond,
blond roast coffee, and a strong mint-like freshness, with low acidity
and astringency. The taste is soft, elegant and long lasting.
